Spiral mixers feature a single, stationary breaker bar around which the bowl revolves; while a helix shaped agitator kneads the dough. This specialised design makes it extremely easy and convenient to mix large quantities of dough at a time relatively quickly. Spiral mixers usually operate with very simple mechanisms which makes them very easy to clean and maintain. Spiral mixers are extremely heavy duty and can easily take a beating in a tough work environment. When using spiral mixers, pay attention to the maximum recommended dough weight. The capacity of the mixer (for e.g. 25 litres) doesn't mean that the mixer can handle 25 kg of flour. Total capacity of the mixer should include 45% (Flour) and 55% (Water). Use this ratio to maximise the life of the mixer as well as produce a high quality dough.
